Biscotti, the best friend a cup of coffee or hot cocoa ever had

  • 3 cups all-purpose flour
  • 3 tsp baking powder
  • 1-1/2 cups granulated sugar
  • 1/2 tsp salt
  • 1/2 cup butter, room temp
  • 3 eggs
  • 1-1/2 tsp cinnamon
  • 1-1/2 tsp vanilla extract
  • 1 cup chopped nuts *

Mix all dry ingredients in a small bowl and set aside.  Cream butter & sugar, add beaten eggs & vanilla.  Add dry ingredients to butter mixture and mix well.  Shape dough into two oblong loaves and place on two parchment-lined (or well-greased) baking sheets.  Bake at 325 degrees for 25 minutes.  Remove from oven and cool for 5 minutes (keep oven on).  With a serrated knife, cut the loaves into diagonal slices about 1/2 inch wide.  Please slices on their sides on the baking sheets and bake for 10-15 minutes, turning once.  Remove from oven and cool on wire racks.  Store in an air-tight container for up to 1 week or freeze in zip-lock bags for 3 months.  Yield:  24 biscotti

Note:  This is a basic biscotti recipe that can be made to suit your taste – exchange 1/2 the vanilla for lemon extract and add in 1 tsp of lemon zest or sub 1/2 cup of mini-chocolate chips or dried fruit (chopped fine) for 1/2 cup of the chopped nuts.  Sub out cinnamon for your favorite spices.  Drizzle the baked/cooled biscotti with white or dark chocolate and sprinkle with sugar or bits of crushed peppermint candy.   The possibilities are endless — and very tasty too!
